- 1 tablespoon balsamic glaze for drizzling

Roast the Beets: Preheat your oven to 400Β°F (200Β°C). Wrap each beet in aluminum foil and roast for 45-50 minutes, or until tender when pierced with a fork. Let them cool, then peel and finely dice or mash them.
Prepare the Goat Cheese: In a small bowl, mix the softened goat cheese with honey, salt, pepper, and fresh thyme (if using) until smooth and well combined.
Assemble the Log: Lay a piece of plastic wrap on a clean surface. Spread the diced or mashed roasted beets evenly over the plastic wrap. Place the goat cheese mixture on top and gently roll it into a log shape, using the plastic wrap to help form it.
Chill: Refrigerate the cheese log for at least 30 minutes to firm up.
