Ingredients
Β Β

  • 2 medium beets roasted and peeled
  • 8 ounces goat cheese softened
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon fresh thyme leaves optional
  • 1/4 cup chopped walnuts or pecans optional
  • 1 tablespoon balsamic glaze for drizzling
  • Crackers or toasted baguette slices for serving

Instructions
Β

  • Roast the Beets: Preheat your oven to 400Β°F (200Β°C). Wrap each beet in aluminum foil and roast for 45-50 minutes, or until tender when pierced with a fork. Let them cool, then peel and finely dice or mash them.
  • Prepare the Goat Cheese: In a small bowl, mix the softened goat cheese with honey, salt, pepper, and fresh thyme (if using) until smooth and well combined.
  • Assemble the Log: Lay a piece of plastic wrap on a clean surface. Spread the diced or mashed roasted beets evenly over the plastic wrap. Place the goat cheese mixture on top and gently roll it into a log shape, using the plastic wrap to help form it.
  • Chill: Refrigerate the cheese log for at least 30 minutes to firm up.
  • Coat with Nuts (Optional): If using, roll the chilled log in chopped walnuts or pecans for added texture and flavor.
  • Serve: Place the cheese log on a serving platter. Drizzle with balsamic glaze and serve with crackers or toasted baguette slices. Enjoy!
