Make the Roux:

  • In a large saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 2 minutes, until the mixture is smooth and bubbly.

Prepare the Sauce:

  • Gradually whisk in the milk and heavy cream, ensuring there are no lumps. Continue whisking until the mixture thickens, about 5–7 minutes.

Flavor the Sauce:

  • Stir in the Dijon mustard, garlic powder, smoked paprika, salt, and pepper. Mix well to incorporate all the flavors.

Add the Cheese:

  • Reduce the heat to low and slowly stir in the shredded cheddar, mozzarella, and Parmesan cheese. Continue stirring until the cheese is fully melted and the sauce is smooth.

Combine Pasta and Sauce:

  • Add the cooked macaroni to the cheese sauce, stirring to coat the pasta evenly.

Optional Topping:
